Ingredients

Vegetables

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • ½ head cabbage, shredded

Liquids & Canned Goods

  • 1 (14 oz) can diced tomatoes
  • 4 cups vegetable broth

Seasonings & Oil

  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Heat the Oil and Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic and sauté for 2 minutes until they become fragrant and slightly softened.
  2. Add Vegetables: Add the sliced carrots, chopped celery, and shredded cabbage to the pot. Cook for about 5 minutes, stirring occasionally, allowing the vegetables to soften.
  3. Add Broth and Tomatoes: Pour in the vegetable broth and the canned diced tomatoes with their juices into the pot. Stir in the Italian seasoning and season with salt and pepper to taste.
  4. Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 20 to 25 minutes until all the vegetables are tender and flavors have melded together.
