Description

This refreshing Watermelon Salad with Feta and Tomatoes is the perfect summer dish, combining juicy watermelon, creamy feta cheese, and sweet, ripe tomatoes, all topped with fresh mint and a light dressing. It’s a delightful balance of sweet and savory flavors.

Ingredients

  • 4 cups watermelon, cubed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste
  • Optional: a sprinkle of chili flakes or a drizzle of honey for added flavor

Instructions

  1. In a large bowl, combine the watermelon cubes, cherry tomatoes, red onion, and feta cheese.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Sprinkle chopped mint over the salad and toss again.
  5. If desired, add a sprinkle of chili flakes or a drizzle of honey for extra flavor.
  6. Serve immediately or chill in the fridge for 10–15 minutes before serving.

Notes

  • For added crunch, you can add cucumber or a handful of toasted almonds.
  • Adjust the amount of feta cheese to your liking — more for extra creaminess!
  • This salad is best served fresh, but can be stored in the fridge for up to 1 day.
