Ingredients
Salad
- 2 cups cooked rice (white or brown)
- 1 cup roasted sweet potatoes
- 1 cup roasted carrots or squash

Cilantro Tahini Sauce
- 1/3 cup tahini
- 1/4 cup water
- 1 clove garlic
- 1/4 cup fresh cilantro
- 2 tablespoons lemon juice
- Salt, to taste
Instructions
- Warm the rice and vegetables: Gently heat the cooked rice along with the roasted sweet potatoes and carrots or squash until warm, either on the stovetop or in the microwave to bring out their flavors.
- Assemble the salad: Place the warm rice in a bowl and evenly top with the roasted vegetables and fresh leafy greens like kale or spinach.
- Prepare the cilantro tahini sauce: In a blender or food processor, combine tahini, water, garlic, fresh cilantro, lemon juice, and salt. Blend until the sauce is smooth and creamy.
- Dress the salad: Drizzle the cilantro tahini sauce over the warm salad, then toss gently to combine all ingredients and coat everything evenly with the flavorful sauce.
