Instructions

  3. Add garlic: Stir in the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  4. Add chickpeas and spices: Add the cooked or canned chickpeas, vegetable broth, smoked paprika, cumin, salt, and black pepper to the pot. Stir to combine all ingredients.
  5. Simmer the soup: Bring the mixture to a boil, then reduce heat to low and let it simmer gently for 15–20 minutes to allow flavors to meld.
  6. Add spinach: Stir in the chopped spinach and cook for a few minutes until the spinach wilts and integrates into the soup.
  7. Finish with lemon juice: Remove the pot from heat and stir in 1 tablespoon of fresh lemon juice to brighten the flavors.
  8. Garnish and serve: Ladle the soup into bowls and garnish with fresh parsley before serving warm for a nourishing meal.
