Ingredients

  • 1 1/2 cups all-purpose flour (or whole wheat flour for a healthier option)
  • 1/2 cup granulated sugar (or coconut sugar for a more natural option)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup almond milk (or any plant-based milk)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar (to help activate the baking powder)
  • 1/2 cup fresh or frozen blueberries (do not thaw if using frozen blueberries)
  • 1/2 cup powdered sugar
  • 12 teaspoons almond milk (or plant-based milk of choice)
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick spray or lightly oil it.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon (if using). Stir to combine.
  3. In a separate bowl, whisk together almond milk, vegetable oil, vanilla extract, and apple cider vinegar.
  4. Pour the wet ingredients into the dry ingredients and stir gently to combine. Do not overmix; the batter should be smooth.
  5. Fold the blueberries into the batter gently. If using frozen blueberries, don’t thaw them.
  6. Spoon the batter into the donut pan, filling each cavity 3/4 full. You can use a piping bag for a cleaner look.
  7. Bake the donuts for 12-15 minutes or until golden brown. A toothpick inserted into the center should come out clean.
  8. Let the donuts cool slightly before transferring them to a wire rack to cool completely.
  9. To make the glaze, whisk powdered sugar, almond milk, and vanilla extract in a small bowl. Adjust the consistency with more sugar or milk.
  10. Once the donuts are cool, drizzle the glaze over the top or dip them in the glaze.
