Ingredients
- 1 1/2 cups all-purpose flour (or whole wheat flour for a healthier option)
- 1/2 cup granulated sugar (or coconut sugar for a more natural option)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup almond milk (or any plant-based milk)
- 1/4 cup vegetable oil (or melted coconut oil)
- 1 teaspoon vanilla extract
- 1 tablespoon apple cider vinegar (to help activate the baking powder)
- 1/2 cup fresh or frozen blueberries (do not thaw if using frozen blueberries)
- 1/2 cup powdered sugar
- 1–2 teaspoons almond milk (or plant-based milk of choice)
- 1/4 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick spray or lightly oil it.
- In a large mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon (if using). Stir to combine.
- In a separate bowl, whisk together almond milk, vegetable oil, vanilla extract, and apple cider vinegar.
- Pour the wet ingredients into the dry ingredients and stir gently to combine. Do not overmix; the batter should be smooth.
- Fold the blueberries into the batter gently. If using frozen blueberries, don’t thaw them.
- Spoon the batter into the donut pan, filling each cavity 3/4 full. You can use a piping bag for a cleaner look.
- Bake the donuts for 12-15 minutes or until golden brown. A toothpick inserted into the center should come out clean.
- Let the donuts cool slightly before transferring them to a wire rack to cool completely.
- To make the glaze, whisk powdered sugar, almond milk, and vanilla extract in a small bowl. Adjust the consistency with more sugar or milk.
- Once the donuts are cool, drizzle the glaze over the top or dip them in the glaze.
