Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) corn, drained
- 1 can (10 oz) cream of mushroom soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 package (32 oz) frozen tater tots
- Salt and pepper to taste
- 1 teaspoon paprika (optional, for extra flavor)
- 1/4 cup chopped green onions or fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet, brown the ground beef over medium heat, breaking it up into small pieces. Drain any excess fat.
- Add the diced onion and minced garlic to the skillet and sauté for 3–4 minutes until softened.
- Stir in the corn, cream of mushroom soup, sour cream, and season with salt, pepper, and paprika. Mix well and cook for an additional 2–3 minutes until heated through.
- Transfer the beef mixture to the prepared baking dish, spreading it evenly.
- Top with shredded cheddar cheese and mozzarella cheese, then layer the frozen tater tots evenly over the top of the casserole.
- Bake for 25–30 minutes, or until the tater tots are golden and crispy and the cheese is melted and bubbly.
- Garnish with chopped green onions or parsley if desired and serve hot.
