Description

Ultimate Cowboy Casserole is a hearty, flavorful dish loaded with ground beef, crispy tater tots, cheese, and a creamy, savory sauce. It’s the perfect comfort food for feeding a crowd or satisfying your craving for a filling, one-pan meal.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 package (32 oz) frozen tater tots
  • Salt and pepper to taste
  • 1 teaspoon paprika (optional, for extra flavor)
  • 1/4 cup chopped green onions or fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, brown the ground beef over medium heat, breaking it up into small pieces. Drain any excess fat.
  3. Add the diced onion and minced garlic to the skillet and sauté for 3–4 minutes until softened.
  4. Stir in the corn, cream of mushroom soup, sour cream, and season with salt, pepper, and paprika. Mix well and cook for an additional 2–3 minutes until heated through.
  5. Transfer the beef mixture to the prepared baking dish, spreading it evenly.
  6. Top with shredded cheddar cheese and mozzarella cheese, then layer the frozen tater tots evenly over the top of the casserole.
  7. Bake for 25–30 minutes, or until the tater tots are golden and crispy and the cheese is melted and bubbly.
  8. Garnish with chopped green onions or parsley if desired and serve hot.
