Description

A light and flavorful turkey salad with fresh herbs, perfect for using up leftover turkey. Creamy mayonnaise and crunchy vegetables make it a satisfying meal.


Ingredients

  • 4 cups diced white meat turkey
  • 1 cup mayonnaise
  • 3/4 cup celery, diced
  • 1/3 cup white onion, diced
  • 1/2 teaspoon fresh thyme (about two sprigs)
  • 1/2 teaspoon fresh rosemary (about a sprig)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Dice the celery and onion. Mince the fresh thyme and rosemary leaves, discarding any stems.
  2. In a large bowl, mix the diced turkey, celery, onion, thyme, rosemary, black pepper, and salt.
  3. Stir in the mayonnaise until everything is evenly coated. Taste and adjust the seasoning if needed.
  4. For the best flavor, cover and refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
  5. Serve it on a sandwich, over a green salad, or with crackers.
