This Tiramisu Yule Log is a delightful fusion of a classic Italian tiramisu and a festive Yule Log cake. Featuring a soft cocoa sponge cake soaked lightly in espresso, layered with creamy mascarpone filling, and dusted with cocoa powder, it makes a perfect holiday dessert centerpiece that’s both elegant and indulgent.
Ingredients
Cake:
- ¾ cup all-purpose flour
- ¾ cup granulated sugar
- 3 large eggs
- ¼ cup unsweetened cocoa powder
Filling:
- 1 cup mascarpone cheese
- 1 cup heavy whipped cream
- ¼ cup powdered sugar
- 1 tbsp espresso or strong brewed coffee
Topping:
- Cocoa powder for dusting
Instructions
- Prepare and Bake the Cake: Preheat your oven and line a jelly roll pan with parchment paper. Whisk together the flour, sugar, cocoa powder, and eggs until you achieve a smooth batter. Pour into the prepared pan, spreading evenly, and bake for approximately 12 minutes, or until the cake springs back when gently pressed.
- Roll the Cake While Warm: Immediately after removing from the oven, carefully invert the cake onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper, and gently roll the cake up with the towel while still warm. This helps to shape the cake without cracking. Allow it to cool completely in the rolled position.
- Prepare the Mascarpone Filling: In a mixing bowl, whip the mascarpone cheese with the heavy whipped cream, powdered sugar, and espresso until smooth, creamy, and spreadable. Be careful not to overwhip, as it can become too stiff.
- Assemble the Yule Log: Unroll the cooled cake gently and spread the mascarpone filling evenly over the surface. Then, carefully roll the cake back up without the towel, ensuring the filling stays inside and the roll is tight but not squished.
- Finish and Chill: Dust the outside of the rolled cake generously with cocoa powder using a fine sieve. For best results, place the Yule Log in the freezer for about 20 minutes before slicing to firm up the filling and make slicing cleaner.
