Description

A comforting and hearty Tater Tot Casserole featuring ground beef, creamy mushroom soup, sour cream, and melty cheddar cheese topped with crispy tater tots.

Ingredients

  • 1 lb ground beef
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • 1 small onion, diced
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (32 oz) frozen tater tots
  • Salt and pepper, to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. Cook the Ground Beef: In a large skillet, cook the ground beef over medium heat, breaking it into crumbles as it cooks. Once browned, drain any excess grease. Add the diced onion and cook for 2-3 minutes until softened.
  3. Add the Soup and Sour Cream: Stir in the cream of mushroom soup and sour cream. Mix well and season with salt and pepper to taste. Let cook for another 2-3 minutes until well combined and heated through.
  4. Assemble the Casserole: Spread the beef mixture evenly in the bottom of the prepared baking dish. Sprinkle 1 cup of the shredded cheddar cheese over the beef.
  5. Top with Tater Tots: Arrange the frozen tater tots in a single layer on top of the cheese.
  6. Bake: Place the casserole in the oven and bake for 25-30 minutes, or until the tater tots are golden and crispy.
  7. Add the Remaining Cheese: Sprinkle the remaining 1 cup of shredded cheddar cheese over the tater tots and return the casserole to the oven. Bake for an additional 5 minutes, until the cheese is melted and bubbly.
  8. Serve: Let the casserole cool for a few minutes before serving. Serve hot with a side salad or your favorite vegetable for a complete meal.

Notes

  • For added texture, mix in frozen peas, corn, or green beans into the beef mixture before layering the cheese.
  • For extra heat, add diced green chilies, jalapeños, or a pinch of red pepper flakes to the beef mixture.
  • For a leaner option, substitute ground turkey or chicken for the ground beef.
  • Experiment with different cheeses like mozzarella or pepper jack for a unique twist.
