Description

A hearty and delicious Tater Tot Breakfast Casserole featuring savory breakfast sausage, fluffy eggs, melted cheddar cheese, and crispy tater tots baked together to create a perfect brunch dish that serves a crowd.

Ingredients

Meat

  • 1 lb breakfast sausage

Egg Mixture

  • 8 eggs
  • 1 cup milk
  • Salt and pepper to taste

Cheese

  • 1 cup shredded cheddar cheese

Topping

  • 1 bag (32 oz) frozen tater tots

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350 °F (175 °C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Sausage: In a skillet over medium heat, cook the breakfast sausage until fully browned and cooked through. Drain excess grease to keep the casserole from becoming too greasy.
  3. Whisk Eggs: In a large bowl, whisk together the 8 eggs, 1 cup of milk, and season with salt and pepper to taste until the mixture is smooth and combined.
  4. Layer Ingredients: Spread the cooked sausage evenly in the bottom of the greased baking dish. Sprinkle the shredded cheddar cheese over the sausage layer. Carefully pour the egg mixture over the sausage and cheese, making sure it is evenly distributed. Finally, evenly layer the frozen tater tots on top.
  5. Bake the Casserole: Place the baking dish in the preheated oven and bake for 45 to 50 minutes, or until the eggs are fully set, the top is golden brown, and the tater tots are crispy.

Notes

  • Add diced vegetables such as bell peppers, onions, or spinach for added color and flavor.
  • You can substitute the breakfast sausage with turkey sausage for a leaner option.
  • Use sharp cheddar cheese for a stronger cheese flavor if preferred.
  • Cover the casserole loosely with foil if the tater tots brown too quickly before the eggs set.
  • Let the casserole rest for 5 minutes before serving to make slicing easier.
