Ingredients

  • For the Taco Rice Bowl:

Instructions

  1. Cook the ground beef in a large skillet over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess fat and add the taco seasoning. Follow packet instructions for adding water and simmering for a few minutes.
  2. While the beef is cooking, prepare the rice according to package instructions. Alternatively, use leftover rice for quicker prep.
  3. In individual bowls, layer the cooked rice as the base, followed by seasoned ground beef, shredded lettuce, diced tomatoes, red onion, black olives, and shredded cheddar cheese.
  4. Crush a handful of Doritos and sprinkle them over the top of the taco rice bowls for a satisfying crunch. You can break them into smaller pieces or leave larger pieces for extra crunch.
  5. Drizzle sour cream over the bowl, add salsa or taco sauce if desired, and garnish with cilantro, jalapeños, and lime wedges for added flavor.
