Ingredients
- For the Taco Rice Bowl:
- 1 lb ground beef (or chicken or turkey)
- 1 packet taco seasoning (or homemade seasoning)
- 1 cup cooked white rice (or brown rice)
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup red onion, finely diced
- 1/2 cup shredded lettuce
- 1/4 cup sliced black olives (optional)
- 1/2 cup sour cream
- 1 tablespoon salsa or taco sauce (optional)
- 1 bag of Doritos (Cool Ranch or Nacho Cheese)
- For Garnishing (optional):
- Fresh cilantro, chopped
- Jalapeños, sliced
- Lime wedges
Instructions
- Cook the ground beef in a large skillet over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess fat and add the taco seasoning. Follow packet instructions for adding water and simmering for a few minutes.
- While the beef is cooking, prepare the rice according to package instructions. Alternatively, use leftover rice for quicker prep.
- In individual bowls, layer the cooked rice as the base, followed by seasoned ground beef, shredded lettuce, diced tomatoes, red onion, black olives, and shredded cheddar cheese.
- Crush a handful of Doritos and sprinkle them over the top of the taco rice bowls for a satisfying crunch. You can break them into smaller pieces or leave larger pieces for extra crunch.
- Drizzle sour cream over the bowl, add salsa or taco sauce if desired, and garnish with cilantro, jalapeños, and lime wedges for added flavor.
- Serve immediately and enjoy the explosion of flavors and textures in every bite!
Notes
- For a vegetarian version, swap the ground beef with black beans, pinto beans, or a plant-based protein.
- Customize with extra veggies like bell peppers, corn, or avocado for added freshness and texture.
- Use any type of cheese, such as Monterey Jack, pepper jack, or a Mexican blend for extra flavor.
- To make this gluten-free, use gluten-free chips and ensure the taco seasoning is gluten-free.
