Description

A moist and flavorful carrot cake bread that combines the warmth of cinnamon and nutmeg with a crunchy, sweet ginger swirl. This delightful loaf offers a perfect balance of tender crumb and crisp topping, ideal for breakfast, snacks, or dessert.


Ingredients

Bread:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 3/4 cup oil
  • 3 eggs
  • 2 cups grated carrots
  • 1 tsp vanilla extract

Ginger Crunch Swirl:

  • 1/3 cup brown sugar
  • 1/3 cup chopped crystallized ginger
  • 1 tsp cinnamon


Instructions

  1. Preheat and prepare pan. Preheat your oven to 175°C (350°F) and grease a loaf pan thoroughly to prevent sticking.
  2. Mix dry ingredients. In a medium bowl, whisk together the all-purpose flour, baking soda, cinnamon, nutmeg, and salt until well combined.
  3. Mix wet ingredients. In a separate large bowl, beat together the white sugar, brown sugar, oil, eggs, and vanilla extract until smooth and creamy.
  4. Combine wet and dry mixtures. Gradually add the dry ingredients to the wet ingredients, mixing gently just until combined to avoid overmixing the batter.
  5. Add grated carrots. Fold in the grated carrots carefully to distribute them evenly throughout the batter.
  6. Prepare the ginger crunch swirl. In a small bowl, mix the brown sugar, chopped crystallized ginger, and cinnamon until evenly blended.
  7. Layer the batter and ginger swirl. Pour half of the carrot batter into the greased loaf pan. Sprinkle the ginger crunch mixture evenly over the batter. Finally, spoon the remaining batter over the ginger swirl layer, smoothing the top.
  8. Bake the bread. Place the loaf pan in the preheated oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool and slice. Remove the bread from the oven and allow it to cool completely in the pan before slicing into 8 to 10 pieces and serving.
