Ingredients
-
12 jumbo shrimp, peeled and deveined, tails on
-
1/2 cup breadcrumbs (preferably panko)
-
1/4 cup grated Parmesan cheese
-
2 tbsp unsalted butter, melted
-
2 cloves garlic, minced
-
2 tbsp fresh parsley, chopped
-
1 tbsp lemon juice
-
1/2 tsp dried thyme
-
Salt and pepper to taste
-
1 tbsp olive oil (for baking)
- Lemon wedges (for serving, optional)
Instructions
-
Preheat the Oven:
-
Preheat your oven to 375°F (190°C).
-
-
Prepare the Shrimp:
-
Using a sharp knife, make a shallow cut along the back of each shrimp to create a pocket for the stuffing. Be careful not to cut all the way through.
-
-
Make the Stuffing:
-
In a medium bowl, combine the breadcrumbs, grated Parmesan cheese, melted butter, minced garlic, fresh parsley, lemon juice, thyme, salt, and pepper. Stir to combine until the mixture is moist and crumbly.
-
-
Stuff the Shrimp:
-
Using a small spoon, stuff each shrimp with the breadcrumb mixture, pressing gently to make sure it is packed in.
-
-
Bake the Shrimp:
-
Place the stuffed shrimp on a baking sheet lined with parchment paper or lightly greased. Drizzle the shrimp with olive oil and bake for 12-15 minutes, or until the shrimp are cooked through and the stuffing is golden brown.
-
-
Serve:
- Serve the stuffed shrimp hot with lemon wedges and a side of dipping sauce, such as cocktail sauce or garlic butter.
Notes
-
You can make the stuffing ahead of time and refrigerate it for up to 1 day.
-
For a more decadent version, add a bit of cream cheese or crab meat to the stuffing mixture.
-
Make sure not to overcook the shrimp; they should be opaque and slightly firm when done.
-
These stuffed shrimp can also be grilled for a smoky flavor if preferred.
- Serve with a fresh salad or rice for a complete meal.
