Description

Ingredients

  • 12 jumbo shrimp, peeled and deveined, tails on

  • 1/2 cup breadcrumbs (preferably panko)

  • 1/4 cup grated Parmesan cheese

  • 2 tbsp unsalted butter, melted

  • 2 cloves garlic, minced

  • 2 tbsp fresh parsley, chopped

  • 1 tbsp lemon juice

  • 1/2 tsp dried thyme

  • Salt and pepper to taste

  • 1 tbsp olive oil (for baking)

  • Lemon wedges (for serving, optional)

Instructions

  • Preheat the Oven:

    • Preheat your oven to 375°F (190°C).

  • Prepare the Shrimp:

    • Using a sharp knife, make a shallow cut along the back of each shrimp to create a pocket for the stuffing. Be careful not to cut all the way through.

  • Make the Stuffing:

    • In a medium bowl, combine the breadcrumbs, grated Parmesan cheese, melted butter, minced garlic, fresh parsley, lemon juice, thyme, salt, and pepper. Stir to combine until the mixture is moist and crumbly.

  • Stuff the Shrimp:

    • Using a small spoon, stuff each shrimp with the breadcrumb mixture, pressing gently to make sure it is packed in.

  • Bake the Shrimp:

    • Place the stuffed shrimp on a baking sheet lined with parchment paper or lightly greased. Drizzle the shrimp with olive oil and bake for 12-15 minutes, or until the shrimp are cooked through and the stuffing is golden brown.

  • Serve:

  • Serve the stuffed shrimp hot with lemon wedges and a side of dipping sauce, such as cocktail sauce or garlic butter.

Notes

  • You can make the stuffing ahead of time and refrigerate it for up to 1 day.

  • For a more decadent version, add a bit of cream cheese or crab meat to the stuffing mixture.

  • Make sure not to overcook the shrimp; they should be opaque and slightly firm when done.

  • These stuffed shrimp can also be grilled for a smoky flavor if preferred.
