Instructions

  3. Combine wet ingredients: In a separate bowl, mix the milk, vegetable oil (or melted butter), egg, and vanilla extract until smooth.
  4. Combine wet and dry: Pour the wet mixture into the dry ingredients and stir gently until just combined—avoid overmixing to keep the muffins tender.
  5. Fold in strawberries: Carefully fold the diced fresh strawberries into the batter to distribute evenly without breaking them up.
  6. Fill muffin cups: Divide the batter evenly among the lined muffin cups, filling each about 2/3 full.
