Ingredients
- 1 sheet of puff pastry (store-bought or homemade)
- 1 egg (for egg wash)
- 1 tablespoon water (for egg wash)
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and sliced
- 2 tablespoons sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch mixed with 2 tablespoons water (to make a slurry)
- 1/4 cup powdered sugar (for glaze)
- 1 tablespoon milk (or more to reach desired consistency)
- 1/4 teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry sheet on a lightly floured surface and cut it into 6 squares (or rectangles, depending on your preferred size).
- In a small bowl, whisk together the egg and water to create an egg wash. Brush the edges of each pastry square with the egg wash.
- In a separate bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Spoon a generous amount of the cream cheese filling into the center of each pastry square and spread it evenly.
- Fold the corners of each square toward the center, creating a pocket with the cream cheese in the middle. Brush the edges with more egg wash.
- Bake the pastries for 15-20 minutes or until golden brown and crisp.
- While the pastries are baking, prepare the strawberry topping. In a small saucepan, combine the sliced strawberries, sugar, lemon juice, and cornstarch slurry. Cook over medium heat for 4-5 minutes until thickened and glossy. Remove from heat and set aside.
- Once the pastries are baked, remove them from the oven and cool for 10 minutes.
- Drizzle the strawberry syrup over the pastries, and mix the glaze ingredients in a small bowl. Drizzle the glaze over the pastries for an extra layer of sweetness.
Notes
- For a mixed berry Danish, swap the strawberries with raspberries or blueberries.
- Almond paste or ground almonds can be added to the cream cheese filling for a nutty flavor.
- Try swapping the strawberries for peaches or apricots for a different fruit-filled Danish option.
- For a vegan version, use plant-based cream cheese and dairy-free puff pastry.
