Description

Strawberry Crunch Cheesecake Bites are creamy, mini no-bake desserts coated with a crunchy strawberry cookie topping. These delightful treats blend sweet strawberry flavors with rich and smooth cheesecake, making them perfect for parties or as a bite-sized indulgence.

Ingredients

Crunchy Coating

  • 1 cup crushed golden sandwich cookies
  • 1/2 cup freeze-dried strawberries, crushed

Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping

Optional Coating

  • 1/2 cup melted white chocolate

Instructions

  1. Prepare the Cheesecake Mixture: In a bowl, mix the softened cream cheese, powdered sugar, and vanilla extract together until the mixture is smooth and creamy.
  2. Fold in Whipped Topping: Gently fold in the whipped topping to the cream cheese mixture until it becomes light and creamy, ensuring not to deflate the whipped topping.
  3. Form Bites: Roll the cheesecake mixture into small, bite-sized balls and place them evenly spaced on a baking tray lined with parchment paper.
  4. Freeze to Firm Up: Place the tray in the freezer and allow the cheesecake bites to freeze for about 20 minutes, which helps them set and makes them easier to coat.
  5. Prepare the Strawberry Crunch Coating: In a separate bowl, combine the crushed golden sandwich cookies with the crushed freeze-dried strawberries to create the crunchy coating mixture.
  6. Coat the Cheesecake Bites: Remove the bites from the freezer and roll each one in the strawberry cookie mixture until they are fully coated with the crunchy strawberry topping.
  7. Optional White Chocolate Coating: If using, drizzle or dip the coated cheesecake bites in melted white chocolate to add an extra layer of sweetness and texture.
  8. Refrigerate Before Serving: Place the finished cheesecake bites in the refrigerator until ready to serve to keep them firm and fresh.

Notes

  • For a more pronounced strawberry flavor, substitute freeze-dried strawberries with crushed strawberry cookies.
  • Keep the cheesecake bites refrigerated until serving to maintain their texture and freshness.
  • These bites are ideal as party snacks or small dessert portions.
