Description

This soft, fragrant strawberry bread bursts with juicy fresh strawberries and a hint of vanilla, making it an ideal treat for spring mornings or a sweet afternoon snack alongside tea.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Wet Ingredients

  • 1 cup diced fresh strawberries
  • ¾ cup granulated sugar
  • ½ cup milk
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan to prevent sticking.
  2. Mix Dry Ingredients: In a bowl, whisk together the all-purpose flour, baking powder, and salt until evenly combined.
  3. Combine Wet Ingredients: In another large bowl, whisk the eggs, granulated sugar, milk, vegetable oil, and vanilla extract until the mixture is smooth and homogeneous.
  4. Combine Mixtures: Gently fold the dry ingredient mixture into the wet ingredients, being careful not to over-mix to keep the bread tender.
  5. Add Strawberries: Carefully stir in the diced fresh strawberries, distributing them evenly throughout the batter.
  6. Bake the Bread: Pour the batter into the prepared loaf pan, smoothing the top. Bake in the preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Let the bread cool in the pan for 10 minutes, then remove it and transfer to a wire rack to cool completely before slicing and serving.

Notes

  • For an enhanced flavor profile, consider adding ½ teaspoon almond extract to the batter.
  • This recipe works well with frozen strawberries; just ensure they are thawed and thoroughly drained to avoid excess moisture in the batter.
