Ingredients

- ½ red bell pepper (approx. ¾ cup)
- 4–5 slices ginger
- 3 cloves garlic (thinly sliced)
- 1–2 stalks green onions
Instructions
- Prepare the Beef: Slice the beef into thin strips against the grain.
- Prepare the Vegetables: Thinly slice the onion, red bell pepper, ginger, and garlic, and chop the green onions.
- Stir-Fry the Beef: Heat a large skillet or wok over medium-high heat and add oil. Add the beef strips and stir-fry for 2-3 minutes or until they begin to brown. Remove and set aside.
- Cook the Vegetables: In the same skillet, add more oil and toss in the ginger and garlic. Stir-fry for 1-2 minutes until fragrant. Add the onion and red bell pepper and cook for 2-3 minutes until tender-crisp.
- Combine Beef and Vegetables: Return the beef to the skillet, add the green onions, and stir for 2 more minutes.
