Instructions
- Heat the oil: Warm 2 tablespoons of olive oil in a medium pot over medium heat to prepare for sautéing the aromatics.

- Add garlic: Stir in the minced garlic and cook for about 30 seconds, or until fragrant, being careful not to burn it.
- Add beans and broth: Pour in the drained white beans, vegetable broth, and ½ teaspoon dried oregano. Stir to combine all ingredients.
- Simmer the soup: Bring the mixture to a simmer and cook gently for 10 to 12 minutes to let flavors meld together.
- Add spinach: Stir in the roughly chopped fresh spinach and cook for an additional 2 to 3 minutes until the spinach wilts and softens.
- Season and serve: Add salt and black pepper to taste. Serve the soup warm, optionally topped with grated Parmesan or a squeeze of lemon juice for added brightness.
