Ingredients

Beef and Meat

  • 2 lb beef stew meat, cubed

  • ½ tsp chili flakes (adjust to taste)
  • Salt and pepper, to taste

Vegetables and Liquids

  • 4 cups beef broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 cup diced tomatoes (canned)


Instructions

  1. Brown the Beef: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef stew meat and brown it on all sides to develop flavor and seal in juices.
  2. Sauté Aromatics: Add the chopped onion and minced garlic to the pot and cook until softened and fragrant, about 3-5 minutes.
  3. Add Seasonings: Stir in the tomato paste, smoked paprika, and chili flakes to coat the meat and aromatics, allowing the spices to bloom.
  4. Add Vegetables and Broth: Pour in the beef broth, diced tomatoes, sliced carrots, and diced potatoes. Stir everything together and bring the mixture to a boil.
  5. Simmer the Stew: Reduce the heat to low, cover the pot, and let the stew simmer gently for 1½ to 2 hours, or until the beef is tender and the vegetables are cooked through.
