Instructions

  1. Heat oil: Warm the olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
  2. Sauté onion: Add the diced onion to the pot and cook until softened and translucent, about 5 minutes, stirring occasionally to prevent browning.
  3. Add garlic and spices: Stir in the minced garlic and the ground cinnamon, nutmeg, and ginger; cook for 30 seconds until fragrant, stirring constantly to release the spices’ aromas.
  4. Add pumpkin and broth: Pour in the pumpkin purée and vegetable broth, stirring well to combine all ingredients evenly in the pot.
  5. Simmer soup: Bring the mixture to a simmer and let it cook gently for 20 to 25 minutes to blend the flavors and heat thoroughly.
  6. Blend and finish: Optionally blend the soup until smooth using an immersion blender or a regular blender in batches. Stir in cream or coconut milk if desired, and season with salt and pepper to taste before serving.
