Description

A creamy, savory hummus with pumpkin purée, chickpeas, tahini, and warm spices. A festive fall appetizer or snack, perfect with pita, crackers, or fresh veggies.


Ingredients

Chickpea Mixture:

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 cup pumpkin purée (not pumpkin pie filling)
  • ¼ cup tahini
  • 2 tbsp olive oil (plus more for drizzling)
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 garlic clove, minced
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp ground cinnamon
  • Salt and black pepper, to taste
  • 23 tbsp water (to thin, as needed)

Optional Garnish:

  • Olive oil drizzle
  • Toasted pumpkin seeds (pepitas)
  • Sprinkle of paprika or cinnamon
  • Fresh parsley

Instructions

  1. In a food processor, combine chickpeas, pumpkin purée, tahini, olive oil, lemon juice, garlic, cumin, paprika, cinnamon, salt, and pepper.
  2. Blend until smooth, scraping down sides as needed.

  3. Add water, 1 tbsp at a time, until desired consistency is reached.
  4. Taste and adjust seasoning.
  5. Transfer to a serving bowl, drizzle with olive oil, and garnish with pepitas, paprika, or herbs.

Notes

  • For extra creaminess, peel chickpeas before blending.
  • Add cayenne or harissa for a spicy kick.
