Description
A creamy, savory hummus with pumpkin purée, chickpeas, tahini, and warm spices. A festive fall appetizer or snack, perfect with pita, crackers, or fresh veggies.
Ingredients
Chickpea Mixture:
- 1 (15 oz) can chickpeas, drained and rinsed
- 1 cup pumpkin purée (not pumpkin pie filling)
- ¼ cup tahini
- 2 tbsp olive oil (plus more for drizzling)
- 2 tbsp lemon juice (freshly squeezed)
- 1 garlic clove, minced
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp ground cinnamon
- Salt and black pepper, to taste
- 2–3 tbsp water (to thin, as needed)
Optional Garnish:
- Olive oil drizzle
- Toasted pumpkin seeds (pepitas)
- Sprinkle of paprika or cinnamon
- Fresh parsley
Instructions
- In a food processor, combine chickpeas, pumpkin purée, tahini, olive oil, lemon juice, garlic, cumin, paprika, cinnamon, salt, and pepper.
- Add water, 1 tbsp at a time, until desired consistency is reached.
- Taste and adjust seasoning.
- Transfer to a serving bowl, drizzle with olive oil, and garnish with pepitas, paprika, or herbs.
Blend until smooth, scraping down sides as needed.
Notes
- For extra creaminess, peel chickpeas before blending.
- Add cayenne or harissa for a spicy kick.
- Keeps in the fridge up to 5 days in an airtight container.
