Description

Tender slow-cooked chicken simmered in apple cider infused with cinnamon, nutmeg, and thyme. This cozy fall dinner features juicy chicken thighs or breasts cooked with sliced onions and apples in a flavorful spiced sauce, perfect served over rice or mashed potatoes.

Ingredients

Chicken Ingredients

  • 2 lbs chicken thighs or breasts

Liquid and Sauce

  • 2 cups apple cider
  • 1 tbsp Dijon mustard

Produce

  • 1 onion, sliced
  • 2 apples, sliced

Spices and Herbs

  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp dried thyme
  • Salt & pepper, to taste

Instructions

  1. Prepare the base: Place the sliced onions and apples evenly at the bottom of the slow cooker to create a flavorful bed for the chicken.
  2. Layer the chicken: Arrange the chicken thighs or breasts over the onions and apples, ensuring they are spread out evenly.
  3. Make the spiced cider sauce: In a bowl, mix together the apple cider, Dijon mustard, cinnamon, nutmeg, thyme, salt, and pepper until well combined.
  4. Pour the sauce: Pour this spiced cider mixture evenly over the chicken in the slow cooker, coating the pieces well.
  5. Slow cook: Cover and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the chicken is tender and cooked through.
  6. Serve: Shred the chicken if desired or serve whole. Drizzle with the cooking sauce. For a thicker sauce, mix cornstarch with water to form a slurry and stir into the sauce before serving.

Notes

  • Add baby carrots or sweet potatoes to the slow cooker for a complete meal.
  • This dish pairs beautifully over rice or mashed potatoes to soak up the sauce.
  • To thicken the sauce, stir in a cornstarch slurry during the last 15 minutes of cooking.
