- Mix Butter, Sugar, and Vanilla: In a large bowl, cream together the softened butter and ½ cup powdered sugar until light and fluffy. Stir in the vanilla extract to combine evenly.
- Add Flour and Nuts: Gradually mix in the 2 cups of all-purpose flour until just incorporated. Fold in the finely chopped nuts, ensuring they are evenly distributed through the dough without overmixing.
- Shape Cookies: Roll the dough into 1-inch balls and place them on an ungreased baking sheet, spaced about 2 inches apart.
- Bake the Cookies: Preheat your oven to 350°F (175°C). Bake the cookies for 10–12 minutes, or until edges are lightly golden but centers remain pale.
- Roll in Powdered Sugar Warm: Immediately after baking, while the cookies are still warm, gently roll each cookie in powdered sugar to coat thoroughly.
- Cool and Roll Again: Allow the cookies to cool completely on a wire rack. Once cooled, roll them again in powdered sugar to create a thick, snowy coating.
