Description

Soft, buttery snowball cookies filled with finely chopped nuts and rolled generously in powdered sugar, perfect for holiday celebrations and cozy gatherings.

Ingredients

Cookie Dough

  • 1 cup butter, softened
  • ½ cup powdered sugar
  • 2 cups all-purpose flour
  • 1 cup finely chopped nuts (pecans or walnuts recommended)
  • 1 tsp vanilla extract

For Rolling

  • Extra powdered sugar for rolling

Instructions

  1. Mix Butter, Sugar, and Vanilla: In a large bowl, cream together the softened butter and ½ cup powdered sugar until light and fluffy. Stir in the vanilla extract to combine evenly.
  2. Add Flour and Nuts: Gradually mix in the 2 cups of all-purpose flour until just incorporated. Fold in the finely chopped nuts, ensuring they are evenly distributed through the dough without overmixing.
  3. Shape Cookies: Roll the dough into 1-inch balls and place them on an ungreased baking sheet, spaced about 2 inches apart.
  4. Bake the Cookies: Preheat your oven to 350°F (175°C). Bake the cookies for 10–12 minutes, or until edges are lightly golden but centers remain pale.
  5. Roll in Powdered Sugar Warm: Immediately after baking, while the cookies are still warm, gently roll each cookie in powdered sugar to coat thoroughly.
  6. Cool and Roll Again: Allow the cookies to cool completely on a wire rack. Once cooled, roll them again in powdered sugar to create a thick, snowy coating.

Notes

  • Both pecans and walnuts work beautifully in this recipe; choose based on preference.
  • Store cookies in an airtight container to maintain their soft, buttery texture.
  • For a richer flavor, consider toasting the nuts lightly before chopping.
  • Ensure butter is softened, not melted, for the best dough consistency.
