Description

Smoky paprika-spiced chicken thighs served with creamy sweet potato mash, creating a vibrant and comforting meal perfect for dinner.

Ingredients

For the Chicken

  • 4 chicken thighs
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper, to taste

For the Sweet Potato Mash

  • 2 cups sweet potatoes, peeled and cubed
  • 1 tbsp butter or coconut oil
  • Salt and pepper, to taste

Instructions

  1. Prepare the Chicken: Rub the chicken thighs evenly with olive oil, smoked paprika, salt, and pepper to coat them fully, ensuring the smoky flavor penetrates the meat.
  2. Cook the Chicken: Grill the chicken thighs or pan-sear them on medium-high heat, cooking each side for about 7 minutes until the chicken is cooked through and has a nice smoky crust.
  3. Boil Sweet Potatoes: While the chicken cooks, place the peeled and cubed sweet potatoes in boiling water and let them cook for about 10 minutes or until tender when pierced with a fork.
  4. Mash the Sweet Potatoes: Drain the sweet potatoes and return them to the pot. Mash with butter or coconut oil and season with salt and pepper to taste, creating a creamy and flavorful mash.
  5. Serve: Plate the smoky paprika chicken thighs on top of a generous bed of the sweet potato mash and serve immediately for a warm, comforting meal.

Notes

  • Add a dash of chili powder or flakes to the chicken rub for extra heat.
  • Butter can be substituted with coconut oil for a dairy-free option.
  • Use skin-on chicken thighs for crispier texture when grilling or searing.
  • Adjust seasoning of mash with a touch of garlic powder or herbs for more flavor.
