Ingredients
Meat and Vegetables
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
Canned Goods
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
Liquids and Oils
- 1 tablespoon olive oil
- 3 cups beef broth
Spices and Seasonings
- 1 teaspoon smoked paprika
- ½ teaspoon chili powder
- ½ teaspoon cumin
- Salt and pepper, to taste
Instructions
- Heat oil: In a large pot, warm the olive oil over medium heat to prepare for sautéing the ground beef and onions.
- Cook ground beef and onion: Add the ground beef and diced onion to the pot and cook until the beef is fully browned and the onions are tender. Drain any excess fat to keep the soup from becoming greasy.
- Sauté garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
- Add remaining ingredients: Pour in the diced tomatoes, black beans, corn, and beef broth. Then, add smoked paprika, chili powder, cumin, salt, and pepper. Stir well to combine all ingredients evenly.
- Simmer soup: Bring the mixture to a boil, then reduce heat to low and let it simmer gently for 25 to 30 minutes. This allows the flavors to meld and the soup to thicken slightly.
- Season and serve: Taste the soup and adjust seasoning with salt and pepper if necessary. Serve the soup warm and enjoy this smoky, hearty meal.
Notes
- For extra heartiness, add diced potatoes to the soup.
- Top the soup with shredded cheese or a dollop of sour cream for added creaminess and flavor.
