Description

A hearty, rustic stovetop stew featuring smoky ham, creamy white beans, tender potatoes, and a savory Parmesan finish, perfect for a comforting meal.

Ingredients

Vegetables and Aromatics

  • 1 onion, diced
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 3 cups potatoes, cubed

Protein and Dairy

  • 2 cups smoked ham, diced
  • 1 Parmesan rind (optional)
  • Grated Parmesan for serving

Pantry Items

  • 2 tablespoons olive oil
  • 2 cans white beans, drained and rinsed
  • 5 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Heat the oil: In a large pot, heat 2 tablespoons of olive oil over medium heat to prepare for sautéing.
  2. Sauté vegetables: Add the diced onion and sliced carrots to the pot and cook until they become softened, about 5-7 minutes.
  3. Add garlic and ham: Stir in the minced garlic and diced smoked ham; cook together for 2 minutes to blend flavors.
  4. Add potatoes, beans, and broth: Incorporate the cubed potatoes, drained white beans, 5 cups of chicken broth, dried thyme, and Parmesan rind (if using) into the pot.
  5. Simmer the stew: Bring the mixture to a simmer and cook for 25–30 minutes until the potatoes are tender and flavors meld.
  6. Season and serve: Season the stew with salt and black pepper to taste. Serve hot with grated Parmesan sprinkled on top for a savory finish.

Notes

  • The Parmesan rind adds depth of flavor but can be omitted if unavailable.
  • Leftovers taste even better the next day as the flavors continue to meld.
