Description

Tender slow-cooked chicken coated in a sweet and tangy sugar-free apricot glaze, perfect for a simple, flavorful, and low-carb family meal that’s easy to prepare and satisfying.

Ingredients

Chicken

  • 6 chicken thighs or breasts

Sauce

  • 1/2 cup sugar-free apricot preserves
  • 1/4 cup soy sauce or coconut aminos
  • 2 garlic cloves, minced
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1/2 tsp ground ginger
  • Salt and pepper to taste

Instructions

  1. Season the Chicken: Generously season the chicken thighs or breasts on both sides with salt and pepper to enhance their natural flavor.
  2. Prepare the Sauce: In a medium bowl, combine the sugar-free apricot preserves, soy sauce or coconut aminos, minced garlic, apple cider vinegar, olive oil, and ground ginger. Stir well to blend all ingredients into a smooth glaze.
  3. Assemble in Slow Cooker: Place the seasoned chicken pieces in the bottom of your slow cooker. Pour the apricot sauce mixture evenly over the chicken, ensuring each piece is well coated.
  4. Cook the Chicken: Cover the slow cooker and cook on low heat for 6 hours, or alternatively on high for 3 to 4 hours, until the chicken is tender and fully cooked through.
  5. Serve: Once cooked, serve the apricot chicken hot alongside cauliflower rice or steamed vegetables for a complete low-carb meal.

Notes

  • For added heat, incorporate chili flakes or a teaspoon of mustard into the sauce mix.
  • If you prefer a thicker sauce, sprinkle a small amount of xanthan gum toward the end of cooking and stir well.
  • Both boneless and bone-in chicken pieces work well with this recipe, adjusting cooking time slightly if needed.
