Description
Tender slow-cooked chicken coated in a sweet and tangy sugar-free apricot glaze, perfect for a simple, flavorful, and low-carb family meal that’s easy to prepare and satisfying.
Ingredients
Chicken
- 6 chicken thighs or breasts
Sauce
- 1/2 cup sugar-free apricot preserves
- 1/4 cup soy sauce or coconut aminos
- 2 garlic cloves, minced
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil
- 1/2 tsp ground ginger
- Salt and pepper to taste
Instructions
- Season the Chicken: Generously season the chicken thighs or breasts on both sides with salt and pepper to enhance their natural flavor.
- Prepare the Sauce: In a medium bowl, combine the sugar-free apricot preserves, soy sauce or coconut aminos, minced garlic, apple cider vinegar, olive oil, and ground ginger. Stir well to blend all ingredients into a smooth glaze.
- Assemble in Slow Cooker: Place the seasoned chicken pieces in the bottom of your slow cooker. Pour the apricot sauce mixture evenly over the chicken, ensuring each piece is well coated.
- Cook the Chicken: Cover the slow cooker and cook on low heat for 6 hours, or alternatively on high for 3 to 4 hours, until the chicken is tender and fully cooked through.
- Serve: Once cooked, serve the apricot chicken hot alongside cauliflower rice or steamed vegetables for a complete low-carb meal.
Notes
- For added heat, incorporate chili flakes or a teaspoon of mustard into the sauce mix.
- If you prefer a thicker sauce, sprinkle a small amount of xanthan gum toward the end of cooking and stir well.
- Both boneless and bone-in chicken pieces work well with this recipe, adjusting cooking time slightly if needed.
