Instructions

  1. Brown the Beef: Season the cubed beef with salt and pepper. Heat the olive oil in a large heavy-bottomed pot over medium-high heat, then add the beef in batches. Brown the meat evenly on all sides for a deep flavor, then remove and set aside.
  2. Sauté Vegetables: In the same pot, add the diced onion, sliced carrots, and mushrooms. Cook over medium heat until softened and slightly caramelized, about 5-7 minutes.
  3. Add Liquids and Seasonings: Return the browned beef to the pot. Stir in the red wine, beef broth, tomato paste, and thyme. Mix well to combine, scraping up any browned bits from the bottom for extra flavor.
  4. Simmer the Stew: Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot partially and let it simmer gently for 2½ to 3 hours, stirring occasionally, until the beef is very tender and the sauce has thickened.

  • For a traditional accompaniment, serve the stew with creamy mashed potatoes or crusty French bread to soak up the delicious sauce.
