Description
A wholesome twist on classic sloppy joes served over roasted sweet potatoes instead of buns, creating a hearty and nutritious bowl perfect for a balanced meal.
Ingredients
Main Ingredients
- 2 large sweet potatoes, cubed
- 1 tbsp olive oil
- 1 lb ground beef or turkey
- 1 small onion, diced
Sauce & Seasoning
- ½ cup tomato sauce
- 2 tbsp ketchup
- 1 tbsp brown sugar
- 1 tsp mustard
- Salt & pepper to taste
Garnish
- Green onions for garnish
Instructions
- Preheat and Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, salt, and pepper to coat evenly, then spread them on a baking sheet and roast for 25 minutes until tender and lightly browned.
- Cook Ground Meat: While the sweet potatoes roast, heat a skillet over medium-high heat. Add the ground beef or turkey and cook until browned, breaking up the meat with a spoon as it cooks.
- Sauté Onions: Add the diced onion to the skillet with the browned meat and continue cooking until the onions soften and become translucent, about 3-5 minutes.
- Add Sauce and Seasonings: Stir in the tomato sauce, ketchup, brown sugar, mustard, salt, and pepper. Mix thoroughly to combine all flavors evenly.
- Simmer the Mixture: Reduce heat to low and let the sloppy joe mixture simmer gently for 5 to 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Assemble and Serve: Spoon the savory sloppy joe meat mixture over the roasted sweet potatoes in serving bowls. Garnish with chopped green onions for a fresh touch and serve immediately.
Notes
- Add black beans to the sloppy joe mixture for extra fiber and protein.
- Top with shredded cheese or sliced avocado to add richness and creaminess.
- For a lighter version, use ground turkey instead of beef.
- Sweet potatoes can be roasted a day ahead to save time when preparing the meal.
