Ingredients

Salad:

  • 10 oz fresh baby spinach
  • 1 cup mini cucumbers, sliced
  • 2/3 cup goat cheese, crumbled
  • 1/2 cup red onions, sliced
  • 1/2 cup dried cranberries
  • 1/2 cup raw walnuts
  • 1 avocado, sliced
  • Freshly ground pepper (for topping)

Dressing:

  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1/4 cup greek yogurt (full fat)
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Toast the Walnuts

    Place a small skillet over medium heat and add the walnuts. Toast the walnuts by cooking them for 3-5 minutes, tossing frequently. You’ll know they’re ready when they become fragrant and start to brown. Remove them from the pan and allow them to cool before adding to the salad.

  2. Prepare the Dressing

    In a small bowl, whisk together all the dressing ingredients until fully combined and creamy. If you prefer, you can use a blender or an immersion blender to achieve a smoother consistency. This dressing will add a flavorful and creamy touch to your salad.

  3. Assemble the Salad

    In a large bowl, add a generous amount of spinach as the base. Top the spinach with cucumbers, goat cheese, onions, cranberries, the toasted walnuts, and sliced avocado. Finish off with some fresh cracked pepper for extra flavor.
