Instructions

  1. Heat the oil: Heat olive oil in a pot over medium heat to prepare for sautéing the aromatics and mushrooms.
  2. Sauté onion and mushrooms: Add the diced onion and sliced mushrooms to the pot and cook for 5–7 minutes until they are softened and lightly browned, enhancing their flavor.
  3. Add garlic and spices: Stir in the minced garlic, dried thyme, and black pepper, cooking for about 30 seconds until fragrant but not browned.
  4. Add broth and quinoa: Pour in the vegetable broth and add the rinsed quinoa to the pot, stirring to combine all ingredients.
  5. Simmer the soup: Bring the mixture to a boil, then reduce the heat and let it simmer gently for 20–25 minutes, or until the quinoa is tender and the flavors meld together.
  6. Season and garnish: Season the soup with salt to taste. Serve hot, garnished with fresh parsley if desired.
