Ingredients

Noodles and Chicken

  • 200 g soba noodles
  • 1 cup cooked shredded chicken

Vegetables and Aromatics

  • 1 tsp ginger, grated
  • Green onions for garnish

Sauces and Oils

  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp oil (vegetable or canola oil recommended)


Instructions

  1. Cook Noodles: Cook soba noodles according to package instructions until al dente, then drain and set aside to prevent overcooking.
  2. Sauté Aromatics: Heat 1 tablespoon of oil in a pan over medium heat. Add minced garlic and grated ginger, cooking until fragrant, about 1 minute, careful not to burn them.
  3. Cook Cabbage: Add shredded cabbage to the pan and sauté until it softens slightly but still retains a bit of crunch, approximately 3-4 minutes.
  4. Add Chicken: Stir in the shredded cooked chicken to warm through with the cabbage for about 2 minutes.
  5. Toss Noodles and Sauce: Add the cooked soba noodles to the pan along with 2 tablespoons of soy sauce and 1 tablespoon of sesame oil. Toss everything together thoroughly and cook briefly for 1-2 minutes to combine flavors.
  6. Garnish and Serve: Remove from heat, garnish with chopped green onions, and serve warm immediately.
