Description
Juicy ranch-seasoned chicken roasted alongside crispy baby potatoes for a simple, crowd-pleasing American dinner that’s perfect for busy weeknights or meal prep.
Ingredients
Chicken
- 4 chicken thighs or breasts
- 1 packet ranch seasoning mix (approximately 1 oz)
- Salt & pepper to taste
Potatoes
- 1½ lbs baby potatoes, halved
- 3 tbsp olive oil
- Half of the ranch seasoning packet (about 0.5 oz)
Garnish (Optional)
- Fresh dill or parsley, chopped
Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) to allow it to reach the proper temperature while you prepare the ingredients.
- Prepare Potatoes: In a large bowl, toss the halved baby potatoes with olive oil and half of the ranch seasoning packet to ensure even coating and flavor.
- Season the Chicken: Coat the chicken thighs or breasts evenly with the remaining ranch seasoning, adding salt and pepper as desired to taste.
- Arrange on Sheet Pan: Place the seasoned chicken and the potatoes in a single layer on a large sheet pan, making sure there is space around each piece for even cooking.
- Bake: Place the sheet pan in the preheated oven and bake for 35–40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and golden brown.
- Garnish and Serve: Remove the pan from the oven, optionally sprinkle with fresh chopped dill or parsley for added freshness, then serve immediately.
Notes
- Add carrots or green beans to the sheet pan for extra vegetables and nutrition.
- Cut potatoes smaller for crisper, more evenly cooked edges.
- Ensure the ranch seasoning mix is gluten-free if following a strict gluten-free diet.
- Chicken can be breast or thigh depending on preference; thighs provide more juiciness, breasts cook slightly faster.
