Ingredients

Chicken

  • 6 bone-in or boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme or rosemary
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Sweet Potatoes

  • 2 large sweet potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Optional Garnish

  • Fresh parsley or thyme for garnish


Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper or foil to prevent sticking and simplify cleanup.
  2. Prepare Sweet Potatoes: Place the peeled and cubed sweet potatoes on the sheet pan. Drizzle with 1 tablespoon of olive oil and toss them to coat evenly. Sprinkle half of the paprika, garlic powder, salt, and black pepper over the potatoes and toss again to season.
  3. Arrange Chicken Thighs: Arrange the chicken thighs on the sheet pan alongside the seasoned sweet potatoes. Drizzle the remaining tablespoon of olive oil over the chicken, then season with the remaining paprika, garlic powder, thyme or rosemary, salt, and black pepper.
  4. Roast the Ingredients: Roast everything in the preheated oven for 35 to 45 minutes. Halfway through the cooking time, flip the sweet potatoes to ensure even caramelization. Continue roasting until the chicken reaches an internal temperature of 165°F (74°C) and the sweet potatoes are tender and caramelized.
  5. Optional Broil: For extra crispy chicken skin, broil the sheet pan for 2 to 3 minutes at the end of the roasting time, watching carefully to prevent burning.
  6. Garnish and Serve: Remove from the oven, garnish with fresh parsley or thyme if desired, and serve warm for a comforting meal.
