Description

Delicate mini gougères filled with a tangy cream-cheese-dill mousse and silky smoked salmon — an impressive bite-sized canapé.


Ingredients

Choux pastry:

  • ½ cup water
  • ¼ cup butter
  • ½ cup flour
  • 2 eggs
  • pinch salt

Filling:

  • 4 oz cream cheese
  • 1 Tbsp lemon juice
  • 1 Tbsp chopped dill
  • 4 oz smoked salmon
  • black pepper

Instructions

  1. Heat oven to 400 °F. Bring water & butter to boil; stir in flour + salt until smooth.
  2. Beat in eggs one at a time; pipe 1-inch mounds.
  3. Bake 18–20 min until puffed & golden. Cool.
  4. Blend filling ingredients.
  5. Slice tops, fill buns, replace lids.
