Ingredients
- 1 cup old-fashioned rolled oats
- 2 cups low-sodium chicken or vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup mushrooms, sliced
- 1/2 cup spinach or kale
- 1/4 cup cherry tomatoes, halved
- 1 egg (fried, poached, or soft-boiled)
- 2 tablespoons shredded cheese (optional)
- 1 green onion, chopped
- Red pepper flakes or hot sauce, optional for serving
Instructions
