Description
Savory Herb Focaccia is a soft and flavorful Italian bread, topped with aromatic herbs like rosemary, thyme, and garlic. It’s perfect as a side for soups, salads, or enjoyed on its own with olive oil and balsamic vinegar.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 teaspoons active dry yeast
- 3/4 cup warm water
- 3 tablespoons olive oil (plus extra for drizzling)
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 teaspoon dried thyme
- 2 cloves garlic, minced
- 1/4 teaspoon freshly ground black pepper
- Coarse sea salt, for topping
Instructions
- In a small bowl, combine warm water, sugar, and yeast. Stir to dissolve, then let sit for 5–10 minutes until the yeast is foamy.
- In a large bowl, combine flour and salt. Add the yeast mixture and 2 tablespoons of olive oil. Stir to form a dough.
- Knead the dough on a floured surface for about 5–7 minutes until smooth and elastic. If the dough is too sticky, add a little more flour, 1 tablespoon at a time.
- Form the dough into a ball and place it in a lightly oiled bowl, turning to coat it in oil. Cover with a clean towel or plastic wrap and let rise for 1–1.5 hours, or until doubled in size.
- Preheat your oven to 400°F (200°C). Punch down the dough and transfer it to a greased baking sheet. Use your fingers to stretch the dough into a rough rectangle or circle about 1 inch thick.
- Drizzle the dough with olive oil and use your fingers to dimple the dough, making small indentations. Sprinkle the minced garlic, rosemary, thyme, and black pepper evenly over the dough. Finish by sprinkling with coarse sea salt.
- Bake for 20–25 minutes, or until the focaccia is golden brown and the edges are slightly crisp.
- Remove from the oven, drizzle with a little extra olive oil, and let cool for a few minutes before slicing and serving.
Notes
- This focaccia is best served warm, but it can be stored in an airtight container at room temperature for up to 3 days.
- For extra flavor, you can add other toppings like olives, sun-dried tomatoes, or grated Parmesan cheese before baking.
- Serve with a side of olive oil and balsamic vinegar for dipping.
