Description

Savory hand pies are the ultimate portable meal or snack with a flaky, buttery pastry and a flavorful filling. Filled with meats, cheeses, and vegetables, they’re a versatile treat perfect for lunch, dinner, or a party appetizer.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice water (more if needed)

For the filling:

  • 1 lb ground beef, chicken, turkey, or lamb (or a combination)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas (optional)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or feta)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 tablespoon Worcestershire sauce or soy sauce
  • 1 egg (for egg wash)

Instructions

  1. Make the Pastry Dough: In a large bowl, combine flour and salt. Add cold, cubed butter and blend until the mixture resembles coarse crumbs. Gradually add ice water until the dough starts to form. Knead briefly, wrap in plastic wrap, and chill for 30 minutes.
  2. Prepare the Filling: Heat oil in a skillet over medium heat. Brown the ground meat, then add onions and garlic. Sauté until softened. Stir in peas, herbs, Worcestershire sauce, salt, and pepper. Add shredded cheese and stir until melted.
  3. Roll Out the Dough: Preheat oven to 375°F (190°C). Roll dough to 1/8-inch thickness. Cut into 6-8 circles, about 4-5 inches in diameter.
  4. Assemble the Hand Pies: Place 2 tablespoons of filling in the center of each dough circle. Fold over, pinch the edges, and crimp with a fork. Brush with egg wash.
  5. Bake the Hand Pies: Place hand pies on a parchment-lined baking sheet and bake for 20-25 minutes until golden brown.
  6. Serve: Let cool slightly before serving. Enjoy with a dipping sauce like ranch or spicy aioli.

Notes

  • For a vegetarian version, swap meat for sautéed mushrooms and spinach with ricotta cheese.
  • For extra flavor, add a pinch of chili flakes or hot sauce to the filling.
  • For breakfast hand pies, use scrambled eggs and sausage.
