Description

A hearty, savory twist on classic French toast—thick slices of bread soaked in a seasoned egg mixture, pan-seared to golden perfection, and topped with tender seasoned beef and fried eggs. This savory French toast is perfect for brunch lovers who prefer a protein-packed, flavorful breakfast that moves beyond the usual sweet fare.

Ingredients

For the French Toast:

  • 4 slices thick-cut bread (brioche, Texas toast, or sourdough)
  • 3 large eggs
  • 1/2 cup milk or cream
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp butter or oil (for cooking)

For the Beef Layer:

  • 1/2 lb ground beef or thin-sliced steak strips
  • 1/2 small onion, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley or thyme
  • Salt and pepper to taste

For the Eggs:

  • 24 eggs (fried or scrambled)
  • 1 tbsp butter

Optional Garnishes:

  • Fresh herbs (chives, parsley)
  • Hot sauce or sriracha
  • Shredded cheese (cheddar, mozzarella, or parmesan)

Instructions

  1. Prepare the Beef: Cook the ground beef and chopped onions in a skillet over medium heat. Season with garlic powder, dried parsley or thyme, salt, and pepper. Continue cooking until the beef is browned and cooked through. Set aside once done.
  2. Make the Savory French Toast: In a shallow bowl, whisk together the eggs, milk or cream, garlic powder, onion powder, paprika, salt, and pepper until well combined. Dip each slice of bread into the egg mixture, ensuring both sides are fully soaked. Heat butter or oil in a skillet over medium heat and cook the soaked bread slices for 2–3 minutes on each side, until golden brown and slightly crisp.
  3. Cook the Eggs: In a separate pan, melt the butter over medium heat. Fry the eggs sunny-side up or scramble them according to your preference. Cook until eggs reach desired doneness and set aside.
  4. Assemble: Place the cooked savory French toast onto plates. Top each slice with a generous portion of the seasoned beef. Add the fried or scrambled eggs on top. Garnish with fresh herbs, shredded cheese, or a drizzle of hot sauce if desired before serving.

Notes

  • Use leftover roast beef, steak, or corned beef instead of ground beef for variety.
  • For extra crispness, toast the bread slices lightly before dipping them into the egg mixture.
  • Add sautéed vegetables like peppers, spinach, or mushrooms to the beef mixture for a more filling breakfast.
