Description

Savory Cranberry Bread is a tender and moist quick bread featuring the tartness of fresh cranberries balanced with aromatic herbs and sharp cheese. This lightly savory bread is perfect as a side for soups, salads, or holiday meals, and also delicious toasted with butter for breakfast or snacks.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried rosemary or thyme

Add-ins

  • 1 cup fresh or frozen cranberries, roughly chopped
  • 1 cup shredded sharp cheddar or Gruyère cheese

Wet Ingredients

  • 1 cup milk or buttermilk
  • 1/4 cup olive oil or melted butter
  • 2 large eggs

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper to prevent sticking.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, black pepper, and dried rosemary or thyme until evenly blended.
  3. Add Cranberries and Cheese: Stir in the roughly chopped cranberries and shredded cheese into the dry mixture, ensuring they are well coated and evenly distributed.
  4. Mix Wet Ingredients: In a separate bowl, whisk together the milk (or buttermilk), olive oil (or melted butter), and eggs until the mixture is smooth and fully combined.
  5. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and gently mix just until combined. Avoid overmixing to keep the bread tender.
  6. Pour Batter and Bake: Transfer the batter to the prepared loaf pan and smooth the top with a spatula. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the Bread: Allow the bread to cool in the pan for about 10 minutes, then remove it and transfer to a wire rack to cool completely before slicing and serving.

Notes

  • You can use frozen cranberries directly without thawing; they add a lovely tart burst in every bite.
  • For added texture and flavor, mix in chopped walnuts or pecans.
  • This bread is delicious served warm with butter or cream cheese.
