Description

Savory Cheese and Olive Quick Bread is a simple, flavorful bread combining the richness of cheese and the briny goodness of olives. Perfect for any meal, this fluffy, easy-to-make bread pairs wonderfully with soups, salads, or as a snack.

Ingredients

  • 2 cups all-purpose flour

  • 1 tbsp baking powder

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp dried oregano (optional)

  • 1 cup shredded cheddar cheese

  • 1/2 cup chopped green olives (or black olives)

  • 1/4 cup chopped fresh parsley (optional)

  • 1/2 cup milk

  • 2 large eggs

  • 1/4 cup olive oil

  • 1 tbsp Dijon mustard (optional, for extra flavor)

Instructions

  • Preheat the oven to 375°F (190°C) and grease or line a 9×5-inch loaf pan with parchment paper.

  • In a large bowl, whisk together the flour, baking powder, salt, pepper, and oregano.

  • Add the shredded cheese, chopped olives, and parsley (if using) to the dry ingredients, mixing well to combine.

  • In a separate bowl, whisk together the milk, eggs, olive oil, and Dijon mustard (if using).

  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.

  • Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

  • Remove from the oven and let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • Slice and serve with your favorite soup, salad, or enjoy as a savory snack.

Notes

  • For a different twist, try using a mix of cheeses, such as mozzarella, Parmesan, or gouda.

  • Add sun-dried tomatoes or caramelized onions for extra depth of flavor.

  • Store any leftover bread in an airtight container at room temperature for up to 3 days, or freeze for longer storage.

  • This bread is perfect for a brunch spread or as a side for grilled meats.
