Description

Ingredients

  • 2 medium carrots, peeled and sliced into rounds
  • 1 medium zucchini, sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the vegetables by peeling and slicing the carrots, zucchini, and onion. Dice the bell peppers and halve the cherry tomatoes. Ensure vegetables are cut into uniform pieces for even roasting.
  3. In a large bowl, combine all the prepared vegetables. Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss everything together until the vegetables are evenly coated with the seasoning and oil.
  4. Spread the seasoned vegetables in a single layer on the prepared baking sheet, ensuring they are not overcrowded for even roasting.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and golden.
  6. Once roasted, remove from the oven and transfer the vegetables to a serving platter. Garnish with freshly chopped parsley and serve immediately.
