Description

Ingredients

  • 2 ribeye steaks (about 1 inch thick)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, smashed
  • 2 sprigs fresh rosemary or thyme
  • Salt and black pepper, to taste
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • ¼ cup Parmesan cheese, grated
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste
  • ¼ teaspoon smoked paprika (optional)

Instructions

  1. Remove the ribeye steaks from the refrigerator and let them come to room temperature for 15-20 minutes.
  2. Heat a large skillet or cast-iron pan over medium-high heat. Add olive oil and heat until shimmering. Season the steaks generously with salt and black pepper.
  3. Place the steaks in the hot skillet and sear for 4-5 minutes per side. Add butter, smashed garlic cloves, and rosemary or thyme during the last 2 minutes, basting the steaks with melted butter.
  4. Remove the steaks from the skillet and rest them for 5-10 minutes.
  5. In the same skillet, reduce heat to medium and melt 2 tablespoons of butter. Add minced garlic and sauté for 1-2 minutes. Add heavy cream, chicken broth, thyme, rosemary, and season with salt and pepper. Simmer for 3-4 minutes until thickened.
  6. Stir in Parmesan, Dijon mustard, and smoked paprika (optional). Cook for an additional 2 minutes until creamy and smooth.
  7. Serve the steaks on plates and drizzle with the creamy garlic sauce. Garnish with fresh herbs and serve with your favorite sides.

Notes

  • If you prefer a different steak, sirloin or filet mignon also work well with this recipe.
  • Add sautéed mushrooms to the sauce for a hearty addition.
  • For a spicy version, sprinkle in red pepper flakes to the sauce for heat.
