Description

Ingredients

Ravioli

  • 2 cups cheese or meat ravioli

Vegetables & Broth

  • 6 cups chicken or vegetable broth
  • 1 onion, diced
  • 1 cup carrots, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups fresh spinach or kale

Seasonings

  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Sauté Vegetables: In a large pot or Dutch oven, heat a small amount of oil over medium heat. Add the diced onion and sliced carrots and sauté until the onion is translucent and the carrots have softened, about 5-7 minutes.
  2. Add Broth and Tomatoes: Pour in the 6 cups of chicken or vegetable broth and add the canned diced tomatoes (with their juice). Stir in the Italian seasoning, and season with salt and black pepper to taste.
  3. Bring to a Boil and Cook Ravioli: Increase the heat and bring the soup to a boil. Once boiling, add the ravioli to the pot. Cook according to ravioli package instructions, usually about 4-6 minutes, until the ravioli float and are tender.
  4. Add Greens and Finish: Stir in the spinach or kale, allowing it to wilt into the hot soup. Adjust seasoning as needed. Serve the soup warm, garnished with additional herbs or grated cheese if desired.

  • Use mini ravioli for easier serving and spoonful-sized bites.
  • For added protein and heartiness, include cooked Italian sausage or ground meat.
  • Feel free to substitute kale with spinach for a milder green.
