Instructions
- Prepare the tortillas: Heat a non-stick skillet over medium heat. Cook the corn tortillas for 1-2 minutes on each side until golden and crispy. Set aside.
- Fry the eggs: In the same skillet, add oil and cook the eggs sunny side up or to your desired doneness. Season with salt and pepper.
- Warm the salsa: Heat the salsa in a saucepan or microwave until warm.
- Assemble the dish: Place each crispy tortilla on a plate. Top with a fried egg and spoon warm salsa over it. Add shredded cheese if desired.
