Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (15 oz) pumpkin purée
- 1 can (15 oz) black beans, drained & rinsed
- 1 can (15 oz) kidney beans, drained & rinsed
- 1 can (28 oz) crushed tomatoes
- 2 cups beef broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp allspice
- ½ tsp cayenne pepper (optional, for heat)
- Salt & black pepper to taste

- Cook Vegetables: In a large pot, heat olive oil over medium heat. Add onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
- Brown Beef: Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
- Season and Cook: Stir in chili powder, cumin, smoked paprika, cinnamon, nutmeg, allspice, cayenne, salt, and pepper. Cook for 1–2 minutes until fragrant.
- Add Ingredients: Add pumpkin purée, beans, crushed tomatoes, and beef broth. Stir well to combine.
- Simmer: Bring to a boil, then reduce heat and let simmer uncovered for 30–40 minutes, stirring occasionally, until chili thickens.
- Adjust and Serve: Taste and adjust seasoning before serving.
Notes
- Garnish with sour cream, shredded cheese, cilantro, or pumpkin seeds.
- Can be made ahead — flavors deepen the next day.
