Description

Ingredients

    Ground Beef Chili:

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 can (15 oz) pumpkin purée
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 can (15 oz) kidney beans, drained & rinsed
  • 1 can (28 oz) crushed tomatoes
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp allspice
  • ½ tsp cayenne pepper (optional, for heat)
  • Salt & black pepper to taste


Instructions

  1. Cook Vegetables: In a large pot, heat olive oil over medium heat. Add onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
  2. Brown Beef: Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
  3. Season and Cook: Stir in chili powder, cumin, smoked paprika, cinnamon, nutmeg, allspice, cayenne, salt, and pepper. Cook for 1–2 minutes until fragrant.
  4. Add Ingredients: Add pumpkin purée, beans, crushed tomatoes, and beef broth. Stir well to combine.
  5. Simmer: Bring to a boil, then reduce heat and let simmer uncovered for 30–40 minutes, stirring occasionally, until chili thickens.
  6. Adjust and Serve: Taste and adjust seasoning before serving.

Notes

  • Garnish with sour cream, shredded cheese, cilantro, or pumpkin seeds.
  • Can be made ahead — flavors deepen the next day.
