Description

A rich, moist pumpkin bread swirled with a creamy cheesecake filling — perfect for brunch or dessert. This delightful autumn treat combines the warm spices of cinnamon and nutmeg with a luscious cream cheese center, creating a flavorful and satisfying loaf that’s easy to bake and sure to impress.

Ingredients

For the Bread:

  • 1 ¾ cups all-purpose flour
  • 1 cup pumpkin puree
  • ¾ cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 tsp baking soda
  • Pinch of salt

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ tsp vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a loaf pan thoroughly to prevent sticking and ensure easy removal after baking.
  2. Make Cream Cheese Filling: In a medium bowl, combine softened cream cheese, sugar, egg, and vanilla extract. Mix until smooth and creamy, setting aside for layering.
  3. Mix Pumpkin Batter: In a separate large bowl, whisk together the flour, pumpkin puree, sugar, oil, eggs, cinnamon, nutmeg, baking soda, and a pinch of salt until the batter is smooth and evenly blended.
  4. Assemble the Loaf: Pour half of the pumpkin batter into the prepared loaf pan. Spoon the cream cheese filling evenly over the batter layer, then carefully top with the remaining pumpkin batter, using a spatula to smooth the top.
  5. Bake: Place the loaf pan in the preheated oven and bake for 55 to 65 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs, avoiding the cream cheese layer.
  6. Cool and Serve: Remove the bread from the oven and allow it to cool completely in the pan. Once cooled, remove from the pan, slice, and serve. For extra sweetness, consider drizzling a glaze over the top. Store leftovers refrigerated.

Notes

  • For extra sweetness and a beautiful finish, drizzle with a simple glaze made from powdered sugar and milk.
  • Keep the pumpkin cream cheese bread refrigerated after baking to maintain freshness and texture.
  • Allow the bread to cool completely before slicing to keep the layers intact.
  • You can substitute vegetable oil with melted butter for a richer flavor.
