Ideal for meal prep and busy mornings, these muffins bake up golden, moist, and delicious, making them a convenient grab-and-go breakfast option.
Ingredients
Dry Ingredients
- 1 cup pancake mix (protein pancake mix preferred)
- 1/2 teaspoon baking powder (optional, for extra fluffiness)
- Pinch of salt
Wet Ingredients
- 2/3 cup milk
- 2 large eggs
- 2 tablespoons maple syrup
Mix-ins
- 1/2 cup cooked breakfast sausage (crumbled)
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat Oven and Prepare Muffin Tin: Preheat your oven to 180°C (350°F). Grease or line a muffin tin to prevent sticking and ensure easy removal of the muffins once baked.
- Mix Wet and Dry Ingredients: In a mixing bowl, whisk together the pancake mix, milk, eggs, maple syrup, baking powder, and a pinch of salt until the batter is smooth and well combined, without lumps.
- Add Sausage and Cheese: Gently fold in the cooked crumbled sausage and shredded cheddar cheese, distributing them evenly throughout the batter.
- Fill Muffin Cups: Pour the batter into the prepared muffin cups, filling each about three-quarters full to allow room for rising during baking.
- Bake: Place the muffin tin in the oven and bake for 15 to 18 minutes, or until the muffins are set, lightly golden on top, and a toothpick inserted in the center comes out clean.
- Cool and Serve: Remove the muffins from the oven and allow them to cool slightly before carefully removing them from the tin. Serve warm for the best flavor, or store for later use.
Notes
- You can substitute turkey sausage or chicken sausage for a leaner option.
- Add a drizzle of maple syrup before serving for extra flavor.
- These muffins freeze well—simply reheat in the microwave for 30 to 60 seconds before serving.
