Description

Soft, aromatic pistachio cardamom rolls featuring a fragrant pistachio-cardamom filling enveloped in tender dough and topped with a light, sweet glaze. A delightful twist on classic cinnamon rolls perfect for breakfast or dessert.


Ingredients

Dough:

  • 2¼ tsp instant yeast
  • ¾ cup warm milk
  • ¼ cup sugar
  • 1 egg
  • ¼ cup butter, melted
  • 3 cups flour

Filling:

  • ½ cup ground pistachios
  • ¼ cup brown sugar
  • 1 tsp cardamom
  • 2 tbsp melted butter

Glaze:

  • ½ cup powdered sugar
  • 1 tbsp milk


Instructions

  1. Activate the yeast: Combine the warm milk, instant yeast, and sugar in a small bowl. Let it rest for 5 minutes until the mixture is frothy and activated, which indicates the yeast is alive and ready to use.
  2. Prepare the dough: In a mixing bowl, add the egg, melted butter, and the activated yeast mixture. Gradually add the flour and knead the dough until it is smooth and elastic. This should take several minutes by hand or with a mixer. Cover the dough and let it rise for 1 hour in a warm place until it doubles in size.
  3. Shape the rolls: Once the dough has risen, roll it out into a rectangular shape on a floured surface. Spread the pistachio-cardamom filling evenly over the dough, then roll it up tightly into a log. Slice the log into 12 equal pieces.
  4. Second rise: Arrange the slices in a baking pan, spaced slightly apart. Cover and allow to rise for another 30 minutes, so the rolls puff up for a soft texture.
  5. Bake the rolls: Preheat the oven to 350°F (175°C). Bake the rolls for 25 minutes, or until golden brown and cooked through.
  6. Glaze and serve: Allow the rolls to cool slightly before drizzling the glaze made from powdered sugar and milk over the top. Optionally, sprinkle chopped pistachios for an attractive presentation.
